grow n p la n t in su b tro p ic a l a n d tro p ic al co u n tries w ith
s h o rt p o st-h a rv e st life. T h is s tu d y w a s c a rrie d o u t to
in crease th e U tilizatio n o f cassa v a as processed p ro d u c ts
a n d m in im ize th e w a ste g e n e ra te d d u rin g th e cassav a
processing. C a ssa v a c ro c k e t is a convenient p ro d u c t
w hich uses cassa v a ro o t as m a in ra w m a te ria l. M ain
objective o f th is stu d y w a s to c a rry out a m aterial
analysis o f th e p ro d u c tio n p ro c e ss o f cassava c ro c k e t to
c h aracterize an d q u a n tify th e in p u ts an d o u tp u ts o f the
process. P rim a ry d a ta o b ta in e d th ro u g h in terv iew in g
produ ctio n s ta ff a n d S e c o n d a ry d a ta w as u se d fo r the
analysis an d th e sa m p le s fo r an aly sis w ere collected
using online m u ltista g e ra n d o m sa m p lin g m eth o d over
60 w o rk in g d ay s o f a c a ssav a c ro c k e t m a n u fa c tu rin g
p lan t. A cco rd in g to re su lts th e w astes g e n e ra te d at
peeling, g ra tin g , sq u e ezin g an d s to ra g e w ere 21.5±1.3% ,
5.0±1.0% , 20.8 ± 1 .7 % a n d 5 ± 1 % o f the ra w cassava ro o t
w eight resp ectiv ely . T h e o th e r w a ste g e n e ra te d w aste
w a te r 2480L p e r a n n u m . R e su lts o b tain ed fro m the
pro x im ate an aly sis o f ra w c a ssav a tu b e r show ed, the
m o istu re co n ten t a s 6 3 .0 7 ± 0 .4 % , p ro tein co n ten t as
1.5±0.3% , fa t c o n te n t as 0 .5 ± 0 .0 3 % , c ru d e fib re co n ten t
as 3.7± 0.4% , ash c o n te n t a s 1.0± 0.2% an d c a rb o h y d ra te
content as 3 0 .2 3 ± 0 .2 % . P ro x im a te com position of
cassava peel (co rtex ) h ad m o istu re co n ten t o f 7.5±(l.3% ,
p ro tein c o n te n t o f 8 .2 ± 0 .1 % , fa t co n ten t of
3 .1± 0 .4 % ,cru d e fib re co n ten t o f 12.5± 0.2% ,asli co n ten t
o f 6.5±0.2% a n d c a rb o h y d ra te co n ten t of
7 1.6± 0.5% .T his case stu d y re v e a ls th a t th e re is a
co n siderable a m o u n t o f w a ste o ccu rred in the
-p r-ed u ctio n -o f-cassav a c ro c k e t fro m ra w cassav a roots
and th e c o rte x o f th e cassav a ro o t as a good so u rce of
n utrients. |
